โจ๊กกุ้ง

Origin

Jok Gung is a traditional Thai dish originating from central Thailand, particularly in Bangkok and nearby provinces. Influenced by Chinese congee-eating culture, it has been skillfully adapted to suit Thai tastes. Jok Gung is one of the most popular breakfast dishes commonly found in small street-side congee stalls.

Characteristics and Flavor

Jok Gung features soft, well-cooked rice porridge blended with fresh, sweet, slightly crunchy shrimp. The porridge has a perfectly thick and sticky consistency, offering a balanced flavor profile with a subtle tang from fish sauce and black pepper, enhanced by the aromatic notes of fried garlic and chopped scallions.

Ingredients

White rice, chicken broth or water, fresh shrimp, garlic, scallions, black pepper, fish sauce, vegetable oil

Serving Method

Serve hot in a large bowl, garnished with chopped scallions and black pepper. Enjoy alongside boiled eggs, or side dishes such as fermented liver and stir-fried green beans.
