หมูกระทะ

Origin

Mu kratha is a beloved Thai dish that originated in Bangkok’s night markets and later spread nationwide, especially after World War II. Inspired by Korean and Japanese grilling styles, it was adapted to suit Thai palates with a signature dipping sauce.

Characteristics and Flavor

Mu kratha consists of layered pork belly, minced pork, chicken, and assorted vegetables grilled over an iron grill. The exterior is crisp while the inside remains juicy and tender, releasing a fragrant aroma from garlic and seasoned sauce. The dominant taste is savory-sweet, followed by heat from black pepper and the refreshing scent of kaffir lime leaves. Served with a signature dipping sauce that is tangy, spicy, and sweet.

Ingredients

Pork belly, minced pork, chicken, parsley, onions, garlic, black pepper, fish sauce, granulated sugar, lime juice, kaffir lime leaves, vegetable oil

Serving Method

Grill until fully cooked, then dip into the prepared sauce. Enjoy with hot steamed rice or eat plain—it’s delicious either way.
